How do I remove VAT from a price?

Divide by 1 plus the rate, not multiply by 1 minus it. A £120 price with 20% VAT is £120 ÷ 1.2 = £100 before VAT, so the VAT is £20 (not £24).

What is the difference between sales tax, VAT and GST?

Sales tax is charged once, at the final sale (as in most of the US). VAT and GST are charged at each stage of production, with businesses reclaiming the tax they paid, so the end buyer pays it once overall. For a shopper the maths is the same.
